Espresso Masterclass #3 — Debunking the 25-Second, 9-Bar Espresso Myths

Two of the most repeated numbers in coffee — 25 seconds and 9 bars — are not scientific truths. They are historical accidents we mistook for rules.
Welcome back to the Espresso Masterclass, Tasse Coffee Roastery’s ten-part educational series and the lead-in to our real, data-driven Espresso Alchemy masterclass. The “perfect” 25-second shot and the “correct” 9-bar pressure feel like laws. They are not. This post traces where each number really came from, what recent fluid-dynamics research says about it, and which numbers you should trust instead — so you stop chasing a clock and start reading your coffee.

Chapter 1
Where the “25 Seconds” Rule Actually Came From
The famous 25-to-30-second window is not a law of physics — it is a starting baseline the Specialty Coffee Association published for a medium roast pulled at a 1:2 ratio in a standard double basket. It was meant as a diagnostic reference point, a rough sanity check that your grind was in the right neighbourhood. Somewhere along the way the coffee world froze that guideline into gospel, and baristas began chasing an exact number on the clock while ignoring what was actually landing in the cup.

Chapter 2
Time Is an Output, Never a Target
Shot time is the result of everything else you set — grind size, dose, yield, basket geometry, pressure and temperature. It tells you what happened to the puck under pressure; it does not tell you whether the shot tastes good. When you grind finer to hit exactly 27 seconds, you are not tuning flavour — you are forcing an output variable to a number while the inputs that actually control taste drift out of view. The clock is an instrument on the dashboard, not the steering wheel.

Chapter 3
The 9-Bar Accident: A Number Born of Springs and Levers
Nine bars was never engineered as the ideal extraction pressure. In 1947 Achille Gaggia’s spring-lever machine forced water through the puck at whatever pressure a compressed spring and a human arm happened to produce — roughly 8 to 10 bars. Faema’s 1961 E61 then used a pump to deliver that same figure electrically and consistently, and manufacturing convention did the rest. The “gold standard” is really a historical fingerprint of 1940s spring mechanics, not a conclusion from controlled science.

Chapter 4
What the New Fluid-Dynamics Science Reveals
Recent work — including a 2024 paper in Physics of Fluids and independent barista research — suggests that the pressure your pump reports and the pressure inside the puck are not the same thing, and that lower settings often extract more cleanly. Several investigations found a sweet spot nearer 6 to 8 bars, where flow stays steadier as the puck degrades, channelling is reduced and extraction becomes more even. The takeaway is not “9 bars is wrong” — it is that pressure is a variable to be dialled, not a constant to be obeyed.

Chapter 5
Ratio and Yield: The Numbers That Actually Matter
If you throw out the myths, what remains? Two numbers you can actually trust: brew ratio and extraction yield. Modern specialty espresso works to a 1:2 ratio by weight — one gram of dry coffee for two grams in the cup — and lands most well-roasted coffees inside the 18–22% extraction yield window where the cup tastes balanced. Get the ratio and the yield right and the shot is usually right, whatever the clock says. Get the yield wrong and no stopwatch reading will save it.

Chapter 6
Roast Level Rewrites Every Rule
The 25-second answer quietly assumes a medium roast — the world’s most common espresso blend. Change the roast and the whole target moves. Light roasts are denser and slower to give up their solubles, often shining at 30–35 seconds and extended 1:2.5 ratios; dark roasts are brittle and fast-extracting, frequently at their best around 20–25 seconds. Applying a single medium-roast number across every bean is the fastest route to a sour light roast or a bitter dark one.

This is the discipline that separates baristas who repeat received wisdom from those who build their own.
