Espresso Masterclass #8 — Pressure Profiling & the SOUP Method

Nine bars is not a law of nature. It is a historical accident — and once you learn to shape pressure over time, the shot becomes an instrument you can actually play.
Welcome back to the Espresso Masterclass series. In Post 3 we dismantled the myth that 9 bars is sacred; in Post 7 we engineered the gentle beginning of the shot with pre-infusion and TCF. Now we take control of everything that happens after: pressure profiling — deliberately varying pump pressure across the shot to shape sweetness, body and bitterness — and its most radical expression, the SOUP method, an ultra-low-pressure technique that pulls pour-over clarity out of an espresso machine.
This is the same data-driven approach we teach hands-on in the Espresso Alchemy masterclass, where profiles are not copied from the internet but designed at the machine, tasted, measured and refined.

Chapter 1
The Accident of Nine Bars
The 9-bar standard was never designed — it was inherited. When Achille Gaggia replaced steam machines with a spring lever in 1948, the spring he could practically build happened to start near 9–10 bars and decay as it unwound. Crema appeared, the world fell in love, and when rotary pumps later replaced springs, engineers simply froze the spring's starting pressure into a constant. In other words, modern flat-9 espresso copies one number from a curve and throws the rest of the curve away. Pressure profiling is simply the decision to take that curve back.
What you'll take away

Chapter 2
Pressure Is Not Flow: The Physics Under the Puck
The most important — and least intuitive — fact in profiling is that more pressure does not always mean more flow. As pressure rises, flow through the bed increases only up to a point, typically somewhere around 6–9 bars at the group; beyond that, the puck compresses so much that resistance grows faster than the push, and flow actually declines. Extraction is done by water moving through coffee, so what you are really controlling with the pressure curve is the flow rate and the contact time — pressure is just the handle you grip. Understanding this pressure–flow–resistance triangle is what separates profiling from randomly waving a paddle.

Chapter 3
The Profile Families: Flat, Declining, Blooming, Turbo
Almost every named recipe on the internet belongs to one of a few families. The flat 9-bar is the classical baseline: intense, heavy-bodied, unforgiving. The declining profile imitates the lever — start near 9, taper toward 6 or below as the puck softens. The blooming espresso borrows from pour-over: a low-pressure soak around 2 bars, a pause while the puck swells and degasses, then a gentle ramp to full pressure. And the turbo shot flips tradition entirely: coarser grind, around 6 bars, fast flow and a short shot for filter-like clarity with less bitterness. Each family is a different answer to the same question — when should the coffee meet how much water, moving how fast?

Behind the shot: Participants in Espresso Alchemy taste the same single origin pulled through three different profile families in a blind flight. The "best" profile is rarely unanimous — which is exactly the point: profiles are tools matched to coffees and preferences, not rankings.
Chapter 4
Why Declining Pressure Works: Matching the Softening Puck
A puck is not the same object at second 5 and second 25. As extraction proceeds, soluble material dissolves away, fines migrate, and the bed loses mechanical integrity — its resistance falls. Hold pressure constant against a weakening puck and flow accelerates exactly when the structure is most fragile, inviting late-shot channelling, harshness and astringency. A declining profile does the opposite: it eases off just as the puck does, keeping flow more stable across the whole shot. This is why the lever's "accidental" curve has survived seventy years of engineering progress — the decay of the spring happens to mirror the decay of the puck.

- Constant pressure against falling resistance means runaway flow at the most fragile moment.
- Tapering pressure stabilises flow, protecting the late shot from channelling and astringency.
Behind the shot: On a naked portafilter the difference is visible: flat-9 shots often blond fast and spray at the end, while a well-built decline holds an even, syrupy cone deep into the shot. We film both on slow motion in class and read them frame by frame.
Chapter 5
The SOUP Method: Espresso Below Two Bars
At the far edge of profiling lives SOUP — an ultra-low-pressure style built for the coffees traditional espresso struggles with most: ultra-light, dense, fruit-forward roasts. A SOUP shot inverts almost every espresso rule. Pressure stays extremely low — under 2 bars, often closer to 1 — the grind is dramatically coarser than a normal espresso setting, and the ratio stretches to around 1:3 or beyond. After a gentle pre-wetting, water moves through the coarse bed quickly and softly, extracting a concentrated cup that drinks like a hybrid of espresso and pour-over: tea-like texture, minimal crema, startling clarity and sweetness with almost none of the sharpness that light roasts show at 9 bars. Born on manual levers and flow-control machines, it has become a favourite trick for making bright modern roasts behave beautifully on espresso equipment.

- SOUP runs under ~2 bars with a much coarser grind and a longer ratio around 1:3.
- Low pressure plus coarse grounds makes the technique remarkably forgiving — channelling almost disappears.
- It shines on ultra-light roasts, delivering pour-over clarity at concentrate strength.
Behind the shot: When a guest coffee is roasted too light for a classic shot, we don't fight it — we SOUP it. In the masterclass we pull the same Nordic-style roast at 9 bars and below 2, then measure both with the refractometer. The numbers, and the faces, tell the same story.
Chapter 6
Profiling on Real Machines
You do not need a laboratory to profile. A spring lever gives you a beautiful declining curve by design. A machine with a flow-control device or paddle lets you shape the shot by hand — slower feed at the start for pre-infusion, full flow through the middle, easing off at the end. Programmable machines let you save a curve and repeat it identically, which is what turns profiling from performance into experiment. Whatever the hardware, the discipline is the same: change one thing at a time, log what you changed, and always anchor the result to shot time, beverage weight and taste. A profile you cannot repeat is an anecdote, not a recipe.
What you'll take away
- Levers, paddles, flow controls and programmable pumps are all valid profiling instruments.
- Repeatability is everything: fix the curve, then vary grind or dose — never both at once.
- Every profiled shot should still be logged by dose, yield, time and taste, exactly as in Post 2.

Chapter 7
Designing a Profile from the Cup Backwards
The mature way to profile starts not at the machine but in the cup. Taste the shot and diagnose: harsh and bitter at the finish suggests too much late-shot pressure — add or steepen the decline. Sour and thin suggests under-extraction — extend pre-infusion, lengthen the shot, or raise mid-shot flow. Muted fruit in a light roast begs for a gentler, longer, lower-pressure approach — perhaps all the way down to SOUP. Then verify with the refractometer: did the change actually move extraction yield in the direction the tongue claimed? When taste, curve and numbers all agree, you haven't just pulled a good shot — you've built a repeatable model of why it was good.

Behind the shot: The final profiling exercise in Espresso Alchemy is a design challenge: each participant is handed a coffee they have never tasted and must propose, pull, measure and defend a pressure profile for it — the closest thing espresso has to a thesis defence.
